Pinning... Skinny Scones

Skinny Chocolate Chip Scones

Can you believe I actually made something I pinned on Pinterest! GO ME!!
On MLK Jr. Day I put my domestic hat on and made some skinny scones from the Skinny Tastes blog.
I tweaked the recipe to make them even skinnier by replacing the sugar with Xyitol and the butter with I Can't Believe It's Not Butter for Baking!

Yum Yum Yum, and I think they look pretty good too!
(FYI the pic are the ones I made, not something I found online)

Here is the recipe:

Ingredients:
  • 3/4 cup cold buttermilk
  • 1/4 cup sugar or sugar replacement like me!
  • 2 tsp vanilla extract
  • 1 large egg
  • 1 cup all purpose flour (Bob's Red Mill)
  • 1 cup white whole wheat flour (Bob's Red Mill)
  • 1 tbsp baking powder
  • 1/2 tsp salt
  • 3 tbsp chilled butter (must be cold) cut into small pieces or my replacement
  • 3/4 cup chocolate chips
  • cooking spray
  • 1 large egg white, lightly beaten
  • 1 1/2 tbsp sugar

Directions:

Preheat
oven to 375°. Combine the first four ingredients in a medium bowl, stirring with a whisk. Spray baking sheet with cooking spray.

Combine
flour, baking powder, salt, in a large bowl, stirring with a whisk. Cut in chilled butter with a pastry blender, or you could use 2 knives, until the mixture resembles coarse meal. Gently fold in chocolate chips. Add milk mixture, stirring just until moist.

Place
dough onto a floured surface and knead lightly four times with floured hands. Form dough into an 9-inch circle onto baking sheet, about 3/4" thick. Using a knife, cut dough into 12 wedges all the way through.

Brush egg white over dough and sprinkle evenly with sugar. Bake until golden, about 18-20 minutes, depending on your oven. Serve warm.

Runner's Chicken "Fried" Quinoa

It may not look pretty but it sure tastes good. From the mind of Mal I bring you Runner's Chicken Fried Quinoa, a take on chicken fried rice.
Now to preface this I cook only for myself and pretty much only shop at Trader Joe's so no specialty ingredients needed for this bad boy.

  • I started off by sautéing some diced onions in a skillet with just some olive oil spray on the base and a pinch of garlic salt. Once those were finished I removed them. Use as much or as little onion as you like.
  • I cooked up two frozen chicken tenderloins (a TJ's must buy) with some salt and pepper for flavor. When they were almost finished I removed them and sliced them into bite size pieces and threw them back into the skillet with 1 tbsp of light butter. Look at me just like the Japanese steakhouse in Waco.
  • I scrambled one large cage free egg (you can add more if you are an egg person, I am not) then when it was finished mixed it in with the chicken. This got pushed into one side of the skillet and moved off direct heat.
  • Next I added veggies. Basically anything I had which was the frozen harvest mix from TJ and a bit of chopped celery. I heated that up a bit with some garlic salt and added my onion. Then gave the whole thing (chicken, egg, and veggies) a big mixing in the skillet.
  • Finally I added one cup of cooked quinoa. I am a quinoa freak and make a big batch of it each week so it was already to go. If you do not know quinoa is what is considered an ancient grain and has the most protein of any grain, it also gets absorbed into the blood stream the slowest of all grains. AKA it is good for ya. Mixed it in and heated it.
  • Finally I added 1/4 cup light reduced sodium soy sauce and stirred it through. Then enjoy. This bad boy is packed with protein, good carbs, and some much needed veggies for the perfect energy meal.
This recipe for me, made two servings (aka one for lunch today, one for lunch tomorrow)

Today is a rest day for my running and good thing 'cause it is pouring out. Tomorrow I am back out for a maintenance run and a big 5.5 miler on Saturday. Wish me luck!!

Christmas Treats!

Well last night was baking night at the Wind's Here Casa (my parents house, we live at the top of a very windy mountain.) We made my favorite easy treat Toffee Cookies, and Peanut Patties!
Yums!!

Here is my recipe for Toffee Cookies:
1 sleeve of saltine crackers
1 cup of butter
1 cup of brown sugar packed
1-2 cups of semi sweet chocolate chips
any nuts you want!

Pre-heat the oven to 400 degrees. Line the crackers on a cookie sheet that has a rim. In a saucepan melt 2 cups of butter careful not to burn it, then add brown sugar and bring to a boil. Boil for 3 minutes. Pour over crackers and bake for 5 min. As soon as it is out of the oven spread between 1 and 2 cups of chocolate chips, and spread as they melt. Sprinkle any kind of nuts you want over the top. Let it cool completely!

This is so easy and so yummy!!

In coming post my families Christmas Eve Extravaganza and Decorations!

Medi Weight Loss Monday!

I am starting to do Medi Mondays here on Preppy Beach Chic

Week 2:
This week I lost 3 pounds!
Bringing me to 11.5 pounds lost!

For those of you wondering what Medi Weight Loss Clinic is the best way to describe it is a doctor directed low carb calorie controlled diet that combines a series of vitamins and B6/B12 injections to provide rapid fat loss. There are three stages the acute stage where you lose the weight. A short term maintence where you start to increase calories and decrease medicine. And finally the wellness stage where you are at your desired weight and have the proper caloric intake to support the weight. This program includes excersising three to five days a week, and ketosis monitoring.

For all Low Carb Dieters try Oopsie Rolls!
3 eggs seperated
A pinch of cream of tartar
3 oz FF Cream Cheese Not softened

Whip 3 egg whites with cream of tartar until very stiff!
In a seperate bowl combine cream cheese with egg yolks. I use a blender.
To the egg yolks you can add sesoning like splenda and cinnamon, oregano, or italian spice for what you want to use them for.
GENTLY fold egg whites into the yolk and cream cheese mixture.
Bake at 325 for 25 Min on a Pam sprayed cookie sheet!

They each have 41 cal, 1 carb, 2 fat, and 5 protein!

Starting Fall with a Treat

So... you know me PBC's always on a health kick trying to lose 15 pounds, but I have decided not to diet just try to eat as healthy as possible as often as I can, with a little WW tracking invovled. I have also added a new and intense workout class to my schedule that is kicking pounds off finally! More on that later... But I love to bake and found this amazing fall recipe that is only 2 WW points!

Chocolate Pumpkin Cupcakes:
1 box chocolate cake mix
15oz. Pumpkin Pie Filling
Bake at 400 for 22-25 min.

These were easy, super moist, healthy, and a yummy way to start adding the flavors of fall!
Bon Appetit!

Key Lime Cupcakes

Being the Florida girl that I am I love Key Lime anything!
I have been looking for a good key lime cupcake recipe and today I found it so I had to share!Makes 24 cupcakes.
  • 1/2 C butter (room temperature)
  • 1 C sugar
  • 3 eggs
  • 1 C milk
  • 1 C flour
  • 1 1/2 C graham cracker crumbs
  • 1 t baking soda
  • 1 t baking powder
  • 1/8 t salt
  • 5 egg yolks
  • 1 14oz can sweetened condensed milk
  • 1/2 C lime or key lime juice (Try Nellie and Joes, Its the best)
  1. Beat the butter for about 30 seconds until creamed.
  2. Add the sugar and mix for 3 minutes until light and fluffy.
  3. Add the eggs, one at a time, being sure to beat for 30 seconds for each egg.
  4. Use food processor or a potato masher or whatever you have on hand to grind the graham crackers into tiny crumbs and powder.
  5. Sift the flour, graham cracker crumbs, baking soda and powder, and salt. (I didn't actually sift the graham cracker crumbs. While mine were small, I don't think they would have fit through the sifter.)
  6. Add about 1/4 of the mixture to the butter mixture.
  7. Add some of the milk.
  8. Continue to add the ingredients in a dry - wet - dry method, ending with the dry.
  9. Mix until just combined.
  10. In a separate bowl, mix the egg yolks, sweetened condensed milk, and lime juice. (FYI - If you want to make an amazing key lime pie, just mix the ingredients in this step, dump it into a pie shell and bake at 375 for 15 minutes. It's the easiest recipe ever! The pie won't be green and it shouldn't be. Lime juice isn't green.)
  11. Dump the key lime mixture into the graham batter and lightly stir. Do NOT fully integrate the key lime and graham batter. You should have clumps of batter in a key lime soup.
  12. Fill cupcake liners 3/4 full. Make sure each liner has a nice distribution of key lime liquid and graham clumps.
  13. Bake at 350 for 20 minutes or until top bounces back when touched.
The Lime Cream Cheese Frosting Recipe

  • 1 8oz package of cream cheese (room temperature)
  • 1/4 C butter (room temperature)
  • 4 C powdered sugar (I recommend that you sift it.)
  • 1 t lime extract
  1. Mix the cream cheese and butter.
  2. Add the powdered sugar and lime extract.

Weight Watcher Wednesday!

Well this week was my first weigh in of Weight Watchers Round 2!
I lost 2.2 pounds... I was hoping to lose more but a loss is a loss.
This is my first WWW post so each Wednesday I am going to set three goals for the upcoming week and a recipe I tried during the week that I liked. So here it goes!

Goals:
1. Walk twice this week outside of my running class
2. Only eat out on Friday and Saturday.
3. Only drink on Saturday.

Recipe:
Tuscan Turkey Slow Cooker Pasta (4pts)
1 pound(s) boneless, skinless turkey breast(s), cut into 1-inch pieces
16 oz canned kidney beans, drained and rinsed
15 oz canned tomato sauce
29 oz canned stewed tomatoes, Italian-style
4 oz mushroom(s), canned, drained and sliced
1 medium green pepper(s), chopped
1 small onion(s), chopped
2 medium stalk(s) celery, chopped
3 medium garlic clove(s), chopped
1 cup(s) water
1 tbsp Italian seasoning
6 oz uncooked whole-wheat spaghetti, broken in half
Place all ingredients, except spaghetti, in a slow cooker. Cover and cook on low heat for 4 hours or until vegetables are tender.

Turn setting to high heat, stir in spaghetti and cover. Stir again after 10 minutes, cover and cook until pasta is tender, about 20 minutes more. Yields about 1 1/2 cups per serving.
