Weight Watcher Wednesday: Southern Style!


Hey WWW ladies... So weigh in last night not good as I knew. I gained 3 pounds partially due to a very heavy lunch before weigh in, but I am determined this week to do better.
I am walking with L (my friend and WW buddy) and we are switching off cooking dinner every night!
So this week I have been watching A LOT of Paula and I have all her cook books so I decided to lighten a few up.
For tonight we are having: Sweet Potato Chips, Corn Bread, and Taco Soup!

Sweet Potato Chips:
1 Large sweet potato sliced 1/4 in thick
Spray each side of chip with 0 cal butter spray, add salt to taste
Bake on 425 for 15 min
Then flip chips over for 5 min min
Put on drying rack to drain and dry!
Easy and super yummy and like only 4 pt!

Weight Watcher Wednesday!


Well this week was my first weigh in of Weight Watchers Round 2!
I lost 2.2 pounds... I was hoping to lose more but a loss is a loss.
This is my first WWW post so each Wednesday I am going to set three goals for the upcoming week and a recipe I tried during the week that I liked. So here it goes!

Goals:
1. Walk twice this week outside of my running class
2. Only eat out on Friday and Saturday.
3. Only drink on Saturday.

Recipe:
Tuscan Turkey Slow Cooker Pasta (4pts)
1 pound(s) boneless, skinless turkey breast(s), cut into 1-inch pieces
16 oz canned kidney beans, drained and rinsed
15 oz canned tomato sauce
29 oz canned stewed tomatoes, Italian-style
4 oz mushroom(s), canned, drained and sliced
1 medium green pepper(s), chopped
1 small onion(s), chopped
2 medium stalk(s) celery, chopped
3 medium garlic clove(s), chopped
1 cup(s) water
1 tbsp Italian seasoning
6 oz uncooked whole-wheat spaghetti, broken in half
    Place all ingredients, except spaghetti, in a slow cooker. Cover and cook on low heat for 4 hours or until vegetables are tender.

    Turn setting to high heat, stir in spaghetti and cover. Stir again after 10 minutes, cover and cook until pasta is tender, about 20 minutes more. Yields about 1 1/2 cups per serving.
